Join one of Brighton’s most iconic venues and elevate your culinary career. Brighton i360 is home to a stunning beachfront Bar, a dynamic events kitchen, and a busy café-bar. We are looking for a talented Senior Sous Chef to support our Head Chef in delivering high-quality, creative food experiences across all outlets.
What You’ll Do
- Lead daily kitchen operations and supervise all sections during service.
- Deputise for the Head Chef, ensuring consistency in food quality, taste, and presentation.
- Train, mentor, and inspire junior chefs and kitchen staff.
- Manage food orders, stock levels, and kitchen organisation to reduce waste and control costs.
- Ensure strict compliance with food safety, hygiene, and allergen regulations (HACCP).
- Assist in the creation of seasonal menus and event-specific offerings.
- Foster a collaborative and positive kitchen culture, even under pressure.
What We’re Looking For
- Minimum 2 years' experience as a Sous or Senior Sous Chef in a fast-paced kitchen.
- Strong leadership, communication, and decision-making skills.
- A passion for food and high standards of cooking and presentation.
- Knowledge of allergens, HACCP, COSHH, and kitchen safety protocols.
- Experience with high-volume service and/or event catering is a plus.
